Fish Pakora


Ingredients : -

  • 4 pieces of fish ( steamed and cut into cube size) you can take boneless fish .
  • Egg - 2 no
  • Salt as per your taste 
  • Chill powder - 1/2  tbsp
  • Turmeric powder - 1/2 tbsp
  • Corn flour - 4tbsp
  • Lemon juice - 2tbsp
  • Chopped coriander leaves - 1tbsp
  • Oil for deep frying 

Methods : -

  • Take one big bowl and bit the eggs properly in this add the chilli powder,salt, lemon juice, turmeric powder and chopped coriander Leaves and mix it properly.
  • Then add corn flour and mix it well to make a smooth batter.
  • Heat oil in a pan for deep fry.
  • Then dip each cube pieces into the batter and put it in hot oil and make it fry till golden fry and crisp.
  • After that take it out to the kitchen napkin and serve hot with ketchup.
  • Enjoy your fish pakora.

Suji Halwa

very popular sweet dessert from Orissa, Suji is easy to prepare, practically takes no time to cook and tastes awesome. My son’s favorite dish. Come we will cook Suji  Halwa.
Ingredients:

  • Rawa - 2 cup
  • Sugar - 1 cup (as per your taste if like less sugar you can put)
  • Ghee - 1/4 cup
  • Cashew Nut - 20gm
  • Raisin  – 20gm
  • Almond - 5-6 piece (Chopped)
  • Milk - 1 cup
  • Water - 2 cup

Method:



  • Roast Suji in a frying pan for about 5-6 minutes.
  • Keep the heat low so that the suji doesn’t burn and turn brown then keep aside.
  • Start heating the milk and water then add the sugar and mix well.
  • Take a pan heat half spoon of Ghee, fry the Cashew nut and rising till the nuts turn little golden brown and then add the fried suji.
  • Fry for 1/2 a minute and then add the milk, water and sugar mixture.
  • Stir it properly to avoid forming lumps. Keep it for 2 mints.
  • When liquid is absorbed, move the pan from the flame and cover with a lid.
  • Your Suji halwa is now ready. Serve it hot or cold.

Chenna Poda (cheese Cake)







Chena Poda or cheese cake is an extremely authentic and extremely popular in odisha as a sweet dish that is made by slowly baking Chenna (Cottage cheese) in earthen fire for few hours and then cooling it down for hours before serving .The sweet dish owes its origin to the temple of Lord Jagannath. This is my husband’s one of the favorite sweet dish.

Ingredients:

  •  Cheese (chenna) – 1kg
  • Semolina (suji) – 150gm
  • Sugar (chini) – 500gm
  • Cashew nuts (kaju) -150gm
  • Raisin (kismis) – 50gm
  • Cinnamon (dalchini)- 50gm

Method: 

  •  Drain excess water from the curdled milk and mash the Chenna.
  • Pour all ingredients in that chenna (cheese) and mix it properly using spoon or a hand blender.
  • Preheat the oven at 350f .
  • Pour  the mixture into the baking pan add the garnishing and bake it 40-50 mints till the top turns to light brown.
  • Insert a tooth pick and check if it comes clean.
  • Cool it after taking out from the oven.
  • Your yummy sweet chenna  poda is Ready.
  • Carefully cut into pieces like cake and serve it.

Baby corn manchurian with sesame



Ingredients : -

  • Baby corn - 250gm (cut it in medium piece)
  • All purpose flour - 2tbsp
  • Corn flour - 2tbsp
  • Ginger and garlic paste - 1tbsp
  • Chilli powder - 1tbsp
  • Sesame seeds - 1tbsp
  • Oil for deep fry
  •  Salt as per taste
  • Garlic chopped - 1tbsp
  • Ginger Chopped - 1/2tbsp
  • Chilly flakes - 1tbsp
  • Tomato ketchup - 2tbsp
  • Soya sauce - 1tbsp
  • Vinegar - 1/2tbsp
  • Sugar - 1/2tbsp
  • Spring onions - 1/2tbsp chopped 

Method : -

  • Take a big bowl and add all purpose flour, corn flour,salt,chilli powder, ginger and garlic paste and add little water to make a thick paste.
  • In this paste add the baby corn, sesame seeds and mix it well.
  • Take a pan and switch on the flame and add the oil for deep fry.
  • Once oil is hot add the baby corn slowly in the medium hit and make it deep fry and keep it aside.
  • Then take another pan and add little oil.
  • When the oil is hit add the chopped ginger and garlic and saute it for 2-3minutes then add the chilly flakes,tomato ketchup,soya sauce,vinegar,salt and sugar and mix it properly to make a nice sauce.
  • If required add little water, after that add fried baby corns into the sauce and mix it for 2 -3 minutes.
  • Then switch off the flame and add spring onions and chopped coriander leaves and mix it well.
  • Yummy Baby corn manchurian is ready to eat, Serve hot.

Watermelon Lemonade

Ingredients:-

  • Watermelon without seeds of cubed - 2cups
  • Sugar - 3tbsp/as per your taste 
  • Lemon juice - 2tbsp
  • Soda water - 1/2cup(optional)
  • Ice cubes as needed 
For Decorating: -
  • Sugar - 1tbsp
  • Lemon zest - 1tbsp
  • Mint leaves - 6 chopped 

Method: -

  • Take the blender and put watermelon,sugar, little ice cubes and lemon juice and blend it properly.
  • Then transfer the juice in to a jug and pour soda water over it and mix it properly.
  • Know take the decorating ingredients in to a plate and mix it well.
  • Now take the serving glass and press the rim over the mixture slightly and keep aside.
  • Then pour the juice into the glass and decorate with mint leaves and serve  chilled with ice cubes.

Bread Uttapam

Ingredients:-

  • 4-6 slices of Bread 
  • 3/4 cup of semolina 
  • 1/3 cup water
  • 1/2 cup of yogurt 
  • 1 small onion chopped 
  • 1 small tomato chopped 
  • 2tbsp of finely chopped coriander leaves
  • 1tbsp of chopped green chilli 
  • Salt to taste 
  • 2tbsp of ghee/oil

Method:-

  • Take a bowl and put the semolina and in this add the salt and curd and mix it properly.
  • Then add little water and mix well and rest this batter for 10 minutes.
  • After 10 minutes take this batter and add chopped onions,green chili,tomato and coriander leaves then mix it properly and keep it aside.
  • Cut the bread in round shape .
  • Take a pan and put little oil and make it heat.
  • In the same time apply the paste on the slice of breads.
  • Then gently place the slice of the breads.
  • Then gently place the slice on the pan with the batter side down in to the oil and let it cook for 2 to 3 minutes.
  • Keep pressing the top to cook properly and little crispi. If you need add little ghee/oil in it.
  • Turn the Bread slice up side down to cook from the both side evenly.
  • Once it brown on top, remove it in the plate and serve hot with any chutney or ketchup.

Eggless Semolina Cake

Ingredients:-

  • Semolina - 1cup
  • All purpose flour/maida - 1cup
  • Baking soda - 1tbsp
  • Baking powder - 1tbsp 
  • Yoghurt - 1/2 cup
  • Oil - 1/2 cup
  • Powdered sugar - 1cup
  • Cardamom powder - 1/2 tbsp 
  • Milk - 1/4 cup
  • Casew nut  - 1/2 cup(chopped)

Methods:-

  • Grease a cake try and keep it aside. Pre heat the oven at 200 degrees celcious for 10 minutes.
  • Take one bowl and put the semolina, all purpose flour,baking soda,baking powder together and keep it aside.
  • Take another bowl and put the yogurt,oil and powdered sugar and mix well till the sugar dissolves.
  • Then add cardamom powder and milk and mix well.
  • Add dry ingredients in to the semolina mixture and chopped cashew nut and mix it properly. Mix well till a soft dropping consistency is reached.
  • Know the cake mixture is ready.
  • Pour into it to the greased baking tray and bake it at 200 degrees Celsius for 30 minutes in a preheated oven.
  • After 30 minutes remove the cake from the oven and check it is cooked from the inside.
  • Allow the cake to cool before take it of the tray.
  • Know cut into pieces and serve.

Chicken Tawa Fry

Ingredients :-

  • Chicken - 500gm medium piece
  • Coriander leaves - 1/2 cup chopped 
  • Mint leaves - 1/2 cup chopped 
  • Rice flour - 1/2 cup
  • Onion - 1 big size chopped 
  • Dry red chilly - 4 to 5(You can take red chili powder 2tbs also)
  • Black cardamom - 1piece
  • Cinnamon sticks - 1 inch
  • Garlic cloves (peeled) - 10 to 12
  • Chopped ginger - 1 inch
  • Turmeric powder - 1/2 tbsp
  • Lemon juice - 3tbsp
  • Green chili - 1/2
Methods: -
  • In a blender add all masalas - black cardamom,cinnamon,garlic,ginger,onions,green chilli, red chilli,coriander leaves and mint leaves.
  • Add little water & blend it to make a thick smooth paste.
  • Add blended masala paste in to the chicken and mix it properly.
  • Add turmeric powder, lemon juice,rice flour & salt to taste and mix it properly.
  • Keep it into the refrigerator for 2 hours.
  • After 2 hours take out the chicken from the refrigerator and mix it again.
  • Heat a pan and add cooking oil and let the oil heat.
  • Put the marinated chicken one by one into the pan,cook it for a minute on medium flame.
  • Cover the pan and cook it for 4 to 5 minutes in low flame.
  • Flip it carefully to cook it other side,cover the pan and cook it for 4 to 5 minutes on low flame.
  • Turn off the flame, take out the chicken into the kitchen napkins to absorb extra oil from it.
  • Now Tawa fry chicken is ready to eat. 
  • Take it into a plate and garnish with sliced onion And lemon and sprinkle little chat masala on it.
  • Serve hot and enjoy...

Chaula khiri (Rice khir)

Ingredients:

  • Raw Rice (arua chaula) -200gm
  • Sugar (chini) –  400gm
  • Milk (khira)- 1liter
  • Ghee – 3-4 tsp
  • Cashew nut (kaju) – 25gm (Fried)
  • Raisin (khismis) – 25gm (Fried)
  • Bay leaves (teja patra)- 2
  • Cardamom (gujurati/ aleicha)- 5 (Half crushed)
  • A pinch of salt (luna)

Method:

  • Wash the rice and keep it aside.
  • Take a pan make it hot after that put the ghee and Sugar fry it for a minutes.
  • Add the rice to the sugar and fry for a mints.
  • Add some water and little salt, bay leaves put it in a pressure cooker and cover it with lid.
  • Allow it to cook properly up to 3-4 whistles.
  • After that remove the lid and add milk to cooked rice and mix it properly.
  • Let it boil in medium flame for 5-10 mints and add the sugar.
  • Boil again 5 mints.
  • After that add condensed milk to it (optional)(for taste only).
  • Add all fried cashew nut, raisin and half crushed cardamom power.
  • As the contents turn semi-thick, switch off the flame.
  • Your khiri is ready, Serve cold.
