INGREDIENTS :
  

  • 400 gm Boneless chicken
  • 3 tbsp Hung Curd
  • 2 tbsp Red Chilli Powder
  • 1 tbsp Turmeric powder
  • 1 tbsp Black pepper powder
  • Salt to taste
  • 3 tbsp Corn flour
  • 1 tbsp All-purpose flour (Maida)
  • 3 tbsp  Curry leaves
  • 1 cup Oil
  • 1 tbsp Ginger and garlic chopped
  • 3 nob Green chili (Chopped)
  • 3 tbsp Tomato sauce
  • 1 tbsp Soya sauce
  • 1 tbsp Chilli powder
  • 2 tbsp Ginger and garlic paste

INSTRUCTIONS :
 

  • First add the chicken pieces into a mixing Bowl.
  • Now add 3 tbs of curd, red chilli powder , black pepper powder, turmeric powder, salt, ginger garlic paste, corn flour , all purpose flour with the chicken pieces.
  • Mix everything Properly with a spoon or using your hand and keep it in refrigerator for at least 30 minutes.
  • For frying chicken, heat 1 cup of oil in a pan with medium flame.
  • When oil is hot enough, add marinated chicken pieces into the pan and cook it from both the sides, once it is became golden brown in colour take out the chicken pieces and drain the excess oil into a kitchen tissue.
  • Take another pan for preparing chicken 65 masala
  • Add two tbsp of oil for heat.
  • Add chopped ginger, garlic, green chilly, curry leaves and saute it in medium flame, until raw smell goes out.
  • After that add tomato sauce, soya sauce, chilly powder and mix it properly (If required, you can add just salt and spices as per your taste )
  • Mix everything for two to three minutes in medium flame.
  • Finally add fried chicken 65 in this gravy and quickly tossed it in medium flame for 2-3 minutes until all the chicken pieces completely mixed into the gravy.
  • Your chicken 65 is ready to serve.
  • For garnishing, sprinkle some chopped curry leaves on top and server hot spicy chiken 65 with some sliced onions and tomato sauce .

Egg Malai Curry

 

Egg Malai Curry


Ingredients :

  

  • 5 nobs Boiled Eggs
  • 3 nobs Onion(roughly chopped)
  • 2 nobs Green Chili
  • 2 tbsp Ginger and Garlic paste
  • 1 tbsp Cumin Powder
  • 1 tbsp Black /pepper Powder
  • 1 tbsp Garam masala powder
  • 3 tbsp Chopped Coriander leaves
  • 200 ml Milk
  • 3 tbsp Oil
  • 2 tbsp Butter
  • Salt as per Taste

INSTRUCTIONS :
 

  • Boil the Egg and cut into halves.
  • Put the roughly chopped onions and green chillies into a blender and blend into a smooth paste.
  • In a pan add 2 tbsp of butter, once it heat the add sliced eggs and sallow fry it from both side very carefully.
  • In a kadai, add oil for heat, add the onion-chilli paste and cook it for 2-3 minutes.
  • Now add the ginger-garlic paste and Mix it nicely, keep cooking in low flame, string often for around 15 mints in low flame till it change the colour and the raw smell go off.
  • Add milk with low flame and mix it well with the masala.
  • Now add the cumin Powder,Pepper Powder, garam Masala and salt mix it well and let it cook till oil the separated from Masala.
  • If required add some water to make gravy and let it boil for few minutes.
  • Add fried egg halves into the gravy, yolk side down to absorb the spices.
  • Cover and cook it with low flame for few minutes.after few minutes turns the egg halves yolk side up.
  • Finally add chopped coriander leaves, butter on to mix well.Cook covered for few minutes till oil separated.
  • Your Egg Malai Curry/Egg Malai Masala is ready to eat . serve hot with Roti/Nan/paratha and enjoy .

Pahadi Chicken

 

Pahadi Chicken



Ingredients :-

  • Boneless chicken medium cubes - 400 grams
  • Fresh mint leaves - 10-12
  • Fresh coriander leaves - 1/4 cup
  •  Ginger -1 inches
  • Garlic - 4-5 cloves
  • Green chilies  - 2
  • Cumin seeds - 1/2 teaspoon
  •  Lemon juice - 2 tablespoons
  • Oil 2 tbsp for greasing
  • Carom seeds (ajwain) -  1/2 teaspoon
  •  Turmeric powder -  1/4 teaspoon
  •  Gram flour (besan) -  2 tablespoons
  •  Mustard oil - 2 tablespoon
  •  Hung yogurt  - 1/2 cup
  •  Garam masala powder  - 1 teaspoon
  •  Green cardamom powder  - 1/4 teaspoon
  •  Dried fenugreek leaves (kasoori methi) powder  - 1/4 teaspoon
  • Oil to grease
  •  Butter for basting
  •  Chaat masala  - 1 tbsp (to sprinkle)
  •  Onion rings for garnish
  • Green chutney to serve


Method :- 

  •  Put mint leaves, coriander leaves, ginger, garlic, green chili, cumin seeds and ½ tablespoon lemon juice into a blender jar, add little water and grind to a thick and smooth paste.
  •  Heat oil in a non-stick pan, add carom seeds, turmeric powder and gram flour, mix well and saute on low heat for 2 minutes or till the gram flour is fragrant. Transfer into a bowl and keep aside.
  •  Heat mustard oil in the same pan till smoking point and set aside to cool.
  • Take chicken cubes in a bowl, add 1 tbsp lemon juice and salt and mix well. Set aside to marinate.
  • Take hung yogurt in another bowl, add coriander leaves paste, garam masala, green cardamom powder and fenugreek leaves powder and mix well.
  •  Add the sauteed gram flour mixture and mix well. Add smoked mustard oil and mix.
  • Add the marinated chicken cubes and mix well. Set aside to marinate for 30 minutes.
  • Preheat oven to 200º C.
  •  String on the chicken cubes on skewers, brush them with leftover marinade.
  • Grease a baking tray with some oil, keep the skewers on the baking tray, keep the tray in the preheated oven and bake at 200º C for 15 minutes.  
  • OR
  •  Take a tawa heat 2tbsp of oil add marinated chicken pieces and fry it slowly with medium heat. If need you can cover the lid and cook.
  • Tawa Fry properly from both the sides and serve hot.
  •  Brush butter on top and sprinkle Chaat masala.
  • Arrange the Pahadi Chicken on a serving platter and serve with onions rings and green chutney.

Chicken Nuggets


Ingredients: -

  • Boneless chicken - 300gms cut into cubes (1inch)
  • Chopped Garlic - 1tbsp
  • Soya sauce - 1tbsp
  • Black pepper powder/crushed - 1tbsp
  • Chilli powder - 1tbsp
  • Egg - 1nob
  • Lemon juice - 1tbsp
  • Bread crumbs - 1cup
  • Refined flour - 1/2cup
  • Oil for deep fry 

Methods : -

  • Wash the chicken pieces properly and keep it aside.
  • Then First we will marinate the chicken,for that take the chicken pieces with a bowl and add the chopped garlic,soya sauce,salt, black pepper powder,lemon juice and mix it well.then leave it for 15mints.
  • Then take another bowl and break the egg into it,add little salt and whisk the egg nicely ,keep it aside.
  • Then take a plate add rice flour,salt,red chilli powder,little black pepper powder mix it and keep it aside.
  • Know we will prepare the chicken nuggets.
  • Take the marinate chicken pieces one by one put it into the flour mixture and mix it properly then take out the chicken pieces and remove the extra flour mixture into it.
  • Then put the chicken pieces into the egg mixture and immediately take it out and put it into the breadcrumbs and make sure you have to make it well coated with breadcrumbs and keep it aside .
  • Then heat oil in a frying pan, when the oil is hot add the chicken nuggets slowly one by one for deep frying with medium flame.
  • Fry it from both sides properly till golden brown . Then remove it from the oil into the kitchen towel.
  • Know your chicken nuggets is ready to eat. So, serve it hot with tamato sauce and sliced onion.
  • Then enjoy your chicken nuggets as a starter or snacks.

Chicken tikka

This is one of the very famous Indian chicken stater.here I am preparing this chicken tikka without oven/grill. This recipe I will prepared with tawa/pan and the taste also nice, you can try it at your home.


Ingredients : -

  • Boneless chicken - 1/2kg cut into cubes 
  • Green Bell pepper - 1large
  • Yellow Bell pepper - 1large
  • Red Bell pepper - 1large 
  • Onion -2large sized 
For Marination :
  • Curd - 100gms
  •  Ginger & garlic paste - 2tbsp
  •  Red chilli powder - 2tbsp
  •  Turmeric powder - 1tbsp 
  •  Garam masala - 1tbsp
  • kasuri methi - 1tbsp
  • Coriander powder - 1tbs

  • Chaat masala - 1tbs Lemon juice - 2tbsp
  • salt as per requirement
  • oil as per requirement  
  • Orange food colour - 1pinch but not necessary 
  •  Some barbeque wooden sticks

For Garnish :

  • Chaat masala - 1/2tbsp
  • Lemon wedges
  • Onion slices 

Method : -

  • First wash the chicken pieces properly and keep it aside.then cut the onion and Bell peppers into cube sized and keep it aside.
  • Then we will prepare the marination for that take one bowl and add curd with all the dry spices,ginger and garlic paste,lemon juice,Kasturi methi ,2tbsp of oil and mix it properly and keep it aside.
  • The marination mixture is ready then add the chicken pieces and mix it properly so that the chicken will be well cotead with masalas then add the Bell pepper and onion cubes into the chicken mixture and again mix it well. 
  • The marination is ready so keep it in the fridge for 2-3hours.
  • After 2 hours take  out the marinated chicken from the fridge.
  • Then mix the chicken mixture and put it in the wooden stick one by one.like one pieces of chicken,then one piece of,Bell pepper then one piece of onions. Follow the same process for the sticks for Tika and keep it aside.
  • Take a Tawa/pan add some oil to heat then place the chicken tikka sticks with medium flame and keep turning in between with adding little oil.
  • Keep turning and let it cook properly from both the sides 10-15mints after that check the chicken pieces , if it's ready then switch off the flame.
  • Chicken tikkas are ready to serve then plate it with lemon wedges ,onion slices and on top sprinkle little chaat masala . serve it with any green chutney and enjoy.

Fish Egg Pakora

Ingredients : -

  • Fish egg - 250gm
  • Gram flour - 1 cup
  • Onion(chopped) - 1 large
  • Garlic (chopped) - 1tbsp
  • Green chilli (chopped) - 1tbsp
  • Turmeric powder - 1/2tbsp
  • Red chilli powder - 1/2tbsp
  • Coriander leaves (chopped) - 1tbsp
  • Cooking oil for fry
  • Salt as per your taste

Method : -

  • Take one bowl and add all the ingredients with fish egg except oil and mix it properly like little thick gravy and keep it aside.
  • Heat oil in a pan and after that take a full tbsp of prepared fish egg mixture and gently put into the hot oil one by one.
  • Fry it on medium flame for a minutes from both side.
  • Fry the pakoras on medium flame till it turns golden brown from both side.
  • After that Take out the pakoras on the kitchen towel to absorb extra oil.
  • It's ready to eat so serve hot with ketchup or green chutney.

Fish fry with Rava

Ingredients :-

  • Rohu fish - 4 pieces (you can use any kind of fish )
  • Turmeric powder - 1/2 tbsp
  • Red chili powder - 2tbs
  • Ginger garlic paste - 2tbsp
  • Lemon juice - 2tbsp
  • Rava(suji) - 1cup
  • Salt as per taste 
  • Oil for fry

Method : -

  • Wash the fish properly and keep it aside.
  • Take one bowl and add all the masala (ginger garlic paste,turmeric,chili powder,lemon juice and salt).
  • Mix it properly and keep it aside.
  • Then take the fish slices one by one and properly coat it with masala and keep it aside.
  • After 5 minutes take the fish with masala coating and again coat it with rava like a thin coat.
  • In a frying pan heat some oil then put fish slice one by one in the pan.
  • Fry it with medium flame till golden brown with both sides.
  • Once fish is cooked from both sides take it off the gas and serve it as a side dish with Rice or as  you want you can take.
