Ingredients:
- Ridge Gourd Peel about 3 cups of peel
- Oil – 1 tbsp
- Chana Dal – 1 tbsp
- Urad Dal – 1 tbsp
- Dry Red Chilies – 4 to 6
- Garlic – 4 to 6 cloves
- Tamarind – 1 tbsp or to taste
- Salt as per taste
- Water as needed
For Seasoning:
- Oil – 1 tbsp
- Mustard Seeds – 1 tsp
- Urad dal – 1 tsp
- Curry leaves – 2 sprig
- Asafoetida / Hing – 1/4 tsp
Method:
- Wash and peel the skin of ridge gourd. You can use the flesh in other recipes, for this one you need only the peel.
- Heat 1 tbsp nof oil. Add the peel,chilies,1 string of curry leaves, garlic,1 tbsp of tamarind paste, Fry till with medium flame till it is cooked.
- Now take it in blender and puree to a coarse mix. Take this in a bowl and set aside.
- Now make seasoning. Heat oil in a pan, add in mustard seeds, urad dal, asafoetida and curry leaves. Let them fry, Pour this into the chutney and mix well.
- Serve with rice, idli or dosa.
Ingredients :-
- Onion - 2medium sized
- Garlic cloves - 1-2
- Red chillies - 2-3
- Tamarind paste - 1tbsp
- Tomato - 1small sized (optional)
- Salt as per taste
- Oil - 3tbsp
- Chana Dal - 1tbsp
- Mustard seeds - 1tbsp
- Curry leaves - 1string
Method :-
- Heat 2tbsp of oil in a pan,add the chana Dal and sauté it for few minutes till it became golden brown with low flame.
- Then add the red chilli and sauté it for few minutes,now add the chopped onion,garlic clove and sauté it for few minutes.
- Then add the chopped tomatoes,salt and mix it properly and sauté it for again few minutes till it became little transparent with low flame.
- Then switch off the flame and let the onion mixture become cool down.
- Then take the blender and put the onion mixture into the blender and add the tamarind paste and blend it nicely to make smooth paste and keep it aside.(if you need you can add little water)
- Then heat 1tbsp of oil in a pan,once oil is hot add the mustard seeds and let it crackle then add the curry leaves and sauté it few minutes with low flame till the curry leaves are became crispy.
- Then switch off the flame and add the tempering mixture into the chutney and mix it nicely.
- Now your onion chutney is ready to serve.serve it with Idli/Dosa and enjoy your breakfast.

- Tomato - 1/2kg
- Sugar - 1 cup or you can increase as per your requirment
- Salt as per taste
- Tamarind paste - 2tbsp(optional)
- Panch foran - 1tbsp
- Curry leaves - 1 string
- Ginger crushed - 1tbsp
- Green chilli - 2nobs cut into slices
- Oil - 2tbsp
- Turmeric powder -1tbsp
- Grated coconut -1/2cup
Method :-
- Wash the tomatoes and cut into small pieces and keep it aside.
- Then heat a pan in medium flame then add the oil and once the oil is hot add the panch foran and let them splutter.
- Then add the curry leaves,sliced green chilli,crushed Ginger and sauté it for few minutes.
- Then Add the chopped tomatoes and mix it then put the turmeric powder,salt mix it nicely and let it cook for few minutes till the tomatoes are half cooked.
- Then add the sugar and tamarind paste mix it properly and let it cook nicely until the tomatoes are soft and the gravy is thick.(if required you can add little water)
- Finally add the grated coconut mix it and switch off the flame.
- Your sweet and sour Tamato Khatta (Chutney) is ready to eat. You can serve with rice/roti as a side dish.
