Tandoori Chicken Without Oven

 


Ingredients :-

  • Whole leg chicken pieces - 500 gm
  • Curd - 100 gm
  • Butter - 1 tbsp
  • Oil - 3-4 tbsp
  • Turmeric Powder - 1 tbsp
  • Red Chili Powder - 2 tbsp
  • Tandoori Masala - 2 tbsp
  • Garam Masala powder - 1 tbsp (optional)
  • Ginger and Garlic Paste - 2 tbsp
  • Salt as per taste

Method :-

  • Wash the chicken properly then make some deep cuts into the chicken pieces.
  • For marination  take a big bowl then add the curd, red chili powder, turmeric powder,Ginger and garlic paste, salt to taste,Tandoori Masala and 1 tbsp of oil.
  • Then mix it nicely, once the mixture is ready then add the chicken pieces into it and marinate it nicely and keep it aside for 25-30 minutes.
  • Then take a Pan/Tawa and add some oil and butter  into it, once oil is hot then place the marinated chicken pieces into the pan.
  • Cook it with medium flame from both the aside properly until you get nice golden brown co lour,cook for 10-12 minutes.
  • Once it done then switch off the flame and keep the cooked tandoori chicken into a big bowl.
  • Know heat the charcoal until its red in co lour.
  • In a bowl where the tandoori chicken is placed, keep a small steel glace and place the charcoal in it and add some oil in it then cover the lid and keep it for 5 minutes.
  • Then garnish the tandoori chicken with Onion,lemon and coriander leaves.
  • Your Tawa Tandoori Chicken is ready to eat , served hot and enjoy your delicious Stater.

Prawns Pepper fry

 

Prawn Pepper Fry



INGREDIENTS

  • 500 gm Prawns/Shrimp
  • 2 tbsp Pepper Corns
  • 1 tbsp Cumin seeds optional
  • 2 nob Green chilli
  • 1 inch Cinnamon stick
  • 2 nobs Cardamom
  • 2-3 nobs Cloves
  • 2 nobs Dry red chilli 
  • 2 nobs Onion (Chopped)
  • 1 inch Ginger
  • 10-12 nobs Garlic Cloves
  • 1/2 tbsp Turmeric powder
  • 1/2 tbsp Garam masala powder
  • Salt to taste
  • 1 string Curry leaves
  • Oil As per requirement 

INSTRUCTIONS
 

  • To devein the Prawn, slit in the middle so the veins are expose and it will be easy to remove.Remove the black veins.
  • Wash it in water properly and keep aside.
  • Now add 1tbsp of salt and 1/2 tbsp of turmeric powder into the Prawns, marinate well and keep it aside for 5 minutes.
  • Take a blender jar add, garlic, ginger, Pepper corn, cumin seeds and blend it(make half crushed)don't make fine paste.
  • Take a pan add 2 tbsp of oil, once oil is hot add the marinated prawns and sallow fry it for 5 minutes, then remove it to a plate and keep aside.
  • In the same pan add another 2-3 tbsp of oil, once oil is hot add all whole garam masala(cardamon, cinnamon, cloves),dry red chilli and stir it for a minutes.
  • Add chopped onions, curry leaves and saute it for some time till the onions became transparent.
  • Now add half crushed pepper and ginger-garlic paste, and saute it for 5 minutes, adding with Turmeric powder and salt on medium flame.if needed you can add little water to cook masala.
  • Once masala is well cooked, add sallow fried prawns and mix it nicely with masala for 5 minutes.Then add 1/2 cup of water, if required you can adjust salt.
  • Cook the Prawns Pepper with masala for 7-10 minutes cover with a lid, in medium flame.
  • Once Prawns are nicely cooked add some freshly ground Pepper powder, slit green chilli, some curry leaves on top to gate yummy taste and turn off the flame.
  • Delicious Pepper Prawns are ready to serve.Serve it with Rice/Roti and enjoy.

Dry Masala Chicken/Chicken Dry



Dry Masala Chicken/Chicken Dry

Ingredients :-

  • Chicken - 500 gm
  • Ginger and garlic paste - 2 tbsp
  • Tomato chopped - 2 nobs
  • Onion thin sliced - 3 nobs big sized 
  • Green Chili - 2 nobs
  • Chili Powder - 1 tbsp
  • Turmeric Powder - 1/2 tbsp
  • Cumin Powder - 1/2 tbsp
  • Coriander Powder - 1/2 tbsp
  • Garam Masala - 1 tbsp
  • Chicken Masala - 1 tbsp
  • Kasturi Methi - 1 tbsp
  • Thick Curd -2 big tbsp
  • Lemon juice - 1 tbsp
  • Salt as per taste
  • Oil
  • Ghee/Butter - 1 tbsp
  • Chat masal - 1 tbsp
  • Bay leaves - 1 nob
  • Clove - 2 nobs
  • Cardamom - 2 nobs
  • Cinnamon stick - 1 small piece

Method :-

  • Wash the chicken pieces nicely drain out all the water and keep it into a big vessel.
  • Now add ginger and garlic paste,curd,lemon juice,chili powder,Turmeric powder,Garam magala powder,chicken masala,coriander and cumin powder,salt,little oil into the washed Chicken and mix all the masla very nicely with chicken using your hand and keep it in refrigerator  an hour for marination.
  • After 1 one hour bring marinated chicken from refrigerator and keep it aside.
  • Now heat oil in a pan,once oil is hot add bay leaves,clove,cinnamon,cardamon and saute it for a minutes.
  • Once it start leaving aroma add the thin sliced onions and saute it very well till it became tender,then add chopped tomato, little salt then mix it well and cook it for 5-7 minutes with medium flame till tomatoes cook well.
  • Now add the marinated chicken pieces and mix it well then cook it with medium flame,cover with a lid.
  • In between make sure you have to mix it once, once it start living water add the kasturi methi,green chili into it and mix it then let it cook  for 10- 15 minutes.
  • After 15 minutes once it completely dried all the water and it became dry the mix the chicken well and simmer the flame.
  • Then add the chat masala o and mix it once.
  • Finally add the Ghee/Butter on top of the chicken masala and cover it for 5 minutes.Then switch off the flame and keep it for rest 5-7 minutes.
  • After 5-10 minutes remove the lid mix the dry Masala Chicken one more time and serve hot with Roti/Paratha and enjoy it, you can serve it as stater too.

Prawns Pepper Fry


Ingredients : -

  • Prawns - 500 gm
  • Pepper corns - 2 tbsp
  • Cumin seeds - 1 tbsps
  • Cinaman - 1 inch
  • Cardamon - 2 Nos
  • Dry red chilies - 2 Nos
  • Green chilies - 2 Nos ( cut it into slice )
  • Onion - 2 medium size ( Finely chopped )
  • Crushed garlic ( 3-4 medium sized cloves )
  • Ginger garlic paste - 1 tbsp
  • Tomato - 1 nobs (Make it Puree) Optional
  • Turmeric power - 1/2 tbsp
  • Garam Masala powder - 1 tbsp
  • Oil
  • Salt as per taste
  • Curry leaves little
  • water

Cooking Method :-

  • Wash the prawn and de-vein nicely then add half tbsp of turmeric power and half tbps of salt, marinate it nicely and keep aside
  • Take a pan, add two tbsp of oil into it , once oil is hot add the marinated prawns and make it shallow fry and keep it aside. Or you can use raw prawn too.
  • For masala, in a blender add cumin seeds and pepper corn and blend it nicely to make a fine power.
  • Heat two tbsp of oil in a pan, add whole spices ( cardamon, cinnamon, dried red chilies and saute it for a minute )
  • Add crushed garlic, green chilies into it and mix it nicely, in this add chopped onions and fry it nicely till it became golden brown in colour,then add ginger garlic paste,  turmeric power mix it till raw smell go.
  • Add tomato puree, ground masala power, garam masala, mix it and cook it for two to three minutes
  • Once it starts leaving oil from the masala, add the previously prepared prawns into it, mix it nicely, add some water, curry leaves and cover it with lid and cook it for 10 mins in medium flame.
  • Once it is done and the prawns cooked nicely with masala and gravy became thick, then finally add some crushed black pepper on top of it and switch off the flame. ( You can adjust the gravy as per your requirement )
  •  Now your Prawns Pepper Fry is ready to eat, serve it with rice or roti as a side dish or you can serve it as a starter.

Brinjal Masala Fry


Ingredients :-

  • Brinjal - 3-4 nobs
  • Chili Powder - 1 tbsp
  • Turmeric Powder - 1/2 tbsp
  • Garam Masala powder - 1/2 tbsp
  • Gram flour(Besan) - 2 tbsp
  • Salt as per taste
  • Oil - 2-3 tbsp(as per requirement)

Method :-

  • First wash the brinjal properly,then cut it into half(if it's small sized make it 2 pieces,little bigger size means you need to cut it into 4 pieces) and keep it aside with a bowl.
  • Then add all the masala into the brinjal,Chili powder,turmeric powder, garam masala powder,salt,gram flour and 1 tbsp of oil into it.
  • Then Marinate the brinjal with masala properly and keep it aside for 5-7 minutes.
  • Now take a pan add 2tbspof oil for heat,once oilis hot then put the marinated Brinjal very slowly for frying with medium flame.
  • Then cover the lid and let it cook 2-3 minutes,Then remove the lid, and fry the brinjal from both the aside until it because golden brown in color and cook nicely.
  • Now switch off the flame ,remove the brinjal into a plate and your brinjal Masala fry is ready to eat.
  • Serve hot with rice/Roti as a side dish.

Indian Macrel Fish Fry

Ingredients :-

  • Mackerel - 4-5no or as per your requirment 
  • Ginger and garlic paste - 1tbsp
  • Chilli powder - 1tbsp
  • Turmeric powder - 1tbsp
  • Lemon juice - 1tbsp
  • Salt to taste 
  • Garam masala powder - 1/2tbsp
  • Cooking oil as per requirement 

Method :-

  • Clean all the fish and make slits on both sides of fish and keep it aside.
  • Take a bowl and add all the ingredients (ginger and garlic paste-chilli powder-turmeric powder-lemon juice-garam Masala powder-salt)except oil and mix it together nicely to make masala paste and keep it aside.
  • Then apply the masala paste  in to the fish and coat the masala paste all over the fish and keep it aside for 10-20mints for marinate.
  • Heat oil into a frying pan and add marinated fish one by one into the oil and fry till it crispy and golden from both sides.
  • Then drain the fish fry into a kitchen napkin and serve hot the fish fry with lemon and onion slices and enjoy It.

Ghee Roast Garlic Chicken


Ingredients :-

  • Chicken - 1/2kg
  • Garlic - 30 cloves
  • Onion - 1 medium  sized
  • Tomato - 2nobs make purée 
  • Chilli powder - 2tbsp
  • Turmeric powder - 1tbsp
  • Garam masala powder - 1/2tbsp
  • Oil - 2-3tbsp
  • Ghee - 3tbsp
  • Salt as per taste 
  • Lemon juice - 2tbsp
  • black pepper - 1tbsp crushed 
  • Cardamom - 2-3piece
  • Cloves - 2-3piece
  • Cinnamon stick - 1small piece
  • Coriander leaves - 1tbsp chopped for garnish 

Method :-

  • First we will marinate the chicken so for that first take half of the garlic and crushed it nicely and keep it aside.
  • Then crushed the ginger and sliced onions and keep it aside.
  • Then wash the chicken nicely and add the lemon juice,crushed black pepper,half of the crushed garlic , chilli powder,turmeric powder,salt , little oil then mix it nicely and cover it with a lid and Let it marinate for 30 minutes. 
  • Take a non-stick pan heat 2tbsp of oil and 1tbsp of ghee then add colves,cinnamon,cardamom and sauté it for few minutes then add the sliced onion and crushed garlic and sauté it nicely till the onions are transparent.
  • Then add the marinated chicken in that and mix it properly. And let it cover with a lid and cook for 10-15mints.
  • Now chicken will be like half cooked. Then add the tomato purée, if you required you can add salt and mix it properly and again cover it with lid and cook for 15mints.
  • Now the chicken must have completely cooked.
  • Then open the lid and increase the heat cook the chicken on a high flame till most of the liquid evaporates.
  • Then drizzle 2tbsp of ghee on the chicken and cook on high heat and keep frying till you get nice colour on the chicken and the masala has totally stuck on the chicken.
  • Now add the chopped coriander and switch off the flame.
  • Now your Ghee roast garlic  chicken is ready to eat, so serve hot with rice or roti. Otherwise you can take it as a stater and enjoy.

Vegetable Cheese Omelette


Ingredients : -

  • Egg - 4nobs 
  • Tomato  - 1 small sized
  • Onion - 1 small sized
  • Capsicum - 1small piece
  • Salt 
  • Oil /butter - 2tbsp
  •  Cheese  - 1/2 cup grated (you can use mozzarella/proceeds) you can use more cheese.
  • Mix herb - 1/2tbsp
  • Black pepper powder - 1/2tbsp
  • Green chilli -1/2tbsp finely chopped 
  • Coriander leaves - 1/2tbsp chopped 

Method : -

  • First finely chopped all the vegetables (onion,capsicum,tomato ) like small cube sized and keep it aside.
  • Take all the chopped vegetables into a bowl add little salt,little black pepper powder,mix herb,green chilli and half cheese mix it nicely and keep it aside.
  • Then take another bowl and broke the eggs and add little black pepper powder,salt and mix nicely into a spoon to get nicely,floppy omelette.
  • Then take a pan add oil,when oil will get hot add the egg mixture slowly into the pan and leave it for half cooked with slow flame.
  • When the omelette will be half cooked then add the vegetable mixture into the half of the omelette then sprinkle some grated cheese .
  • Then flip the other side to cover the vegetables and press it for set and flip it slowly and let it be like 3-4mints .so that tthe cheese will be malte inside and omelette will cook properly from inside.
  • Then switch off the flame and take it out into the plate, your yummy mouth watering cheese omelette is ready to eat.
  • Serve hot and enjoy .
