Chilli Idli

Chilli Idli

 

Ingredients:-

Idli - 7-8 nobs
• Corn flour- 1/2 cup
• Baking powder - a pinch
• Salt as per taste
• Ginger chopped - 1tbsp
• Garlic chopped - 1tbsp
• Green chilli - 2 nob slit
• 1 Large=90gm Onions-chopped into cube
• Capsicum - 1 nob (cut into cubes)
• Red Chili Sauce - 11/2tsp
• Green Chili Sauce - 1 tbsp
• Dark Soy Sauce - 1tbsp
• Vinegar - 1/2 tbsp
• Black Peppercorns-coarsely crushed - 1tbsp
• Salt to taste
• Tomato Ketchup - 2tbsp
• Cooking Oil

Method :-

  • Cut Idli's into 4 pieces. I am using leftover Idli's for making this dish. If you are using fresh Idli's, then refrigerate for an hour.
  • In a large bowl, put chopped Idli's. Add corn flour and coat well. Corn flour adds a slightly crisp layer ,when Idli get fried.
  •  Heat Oil for deep frying on medium heat. Lower heat, and fry on low heat. Fry until Idli get a slightly crisp layer on its top.
  •  We have fried Idli for a min and half. Remove from pan. Fry remaining batches of Idli.
  •  Heat 3-tbsp Cooking Oil in a pan. Add chopped Ginger and Garlic and fry on high heat until garlic becomes brown at its edges.
  •  Add sliced chilies and chopped onions and fry for 30 seconds on high heat. Add chopped  spring onions, chopped capsicum and fry on high heat for a minute. Cover and Cook on medium heat.
  •  Cooked veggies for a min and a half on medium heat. Ensure we retain the crunch. Now, we will add sauces- Red Chili Sauce, Green Chili Sauce , soy sauce and tomato ketchup. Mix well.
  •  Stir fry for a min. Now, we will add fried Idli's and mix well. Add crushed peppercorns, salt to taste and mix well. Add Vinegar and give it a quick stir. Remove from heat.
  •  Chili Idli Fry must be served hot. Serve with Tomato Ketchup or Schezwan Chutney.

Pav Bhaji

Pav Bhaji




Ingredients :-


  • Butter- 1/ 2 cup
  • Large onion  - 2 nobs finely chopped
  • Capsicum chopped - 1 nob
  • Ginger garlic paste - 1 tbsp
  • Cauliflower florets - 1 cup
  • Beet root - 1 nob
  • Carrot - 1 nob
  • Potatoes peeled and cut into 1-inch cubes - 2 nobs
  • Tomatoes cored and diced - 2 nobs
  • Frozen green peas - 1/2 Cup
  • Green Chili - 2 nobs
  • Salt as per taste
  •  Pav bhaji masala - 2 tbsp
  • Kashmir red chili powder - 2 tbsp
  • Turmeric - 1/2 tbsp
  • Cilantro finely chopped - 1/2 cup
  • lemon juice - 2 tbsp
  • Pav buns - 10 nobs
  •  Red onion finely diced - 2 nobs
  • 1 lime cut into wedges

Instructions:-

  • Wash all the vegetables and cut it into cubes and keep it aside
  • Take a pressure cooker and heat 1 tbsp of butter then add add all the cutting vegetables,tomato,green chili(don't add peas)mix it well,then add 1 tbsp of salt  one cup of water then cover the lid and wait for 2-3 whistle.
  • Take a pan and heat 2 tablespoons of the butter,1 tbsp of oil, then Add the chopped onion, and saute it till it became transparent.
  • Now add ginger, garlic paste saute it for few minutes. Add bell peppers and green peas saute it until the it turns translucent.
  •  After 5 minutes,Add the chili powder,turmeric powder ,pav bhaj7 masala mix it well adding some water.cook it for few minutes. 
  • Meanwhile you can mash all the boiled vegetables with the masher and keep it aside.
  • After cooking masala for some time now add the mashed vegitables and mix it well.followed by 2 tbsp of butter.
  • Cover the pan with a glass lid (or other nonlocking lid that fits), as the bhaji will start to splatter,add little little water and cook until heated through, about 10 minutes with medium flame.
  • Taste and adjust the seasoning with salt, pav bhaji masala, and chili powder if needed.  Finally add 1tbsp butter ,2tbsp of lemon juice mix it well,Sprinkle with the cilantro,and switch off the flame. 
  • Just before serving, use the remaining 4 tablespoons butter to spread 1 teaspoon room-temperature butter on the cut side and over the top and bottom of each pav. Heat a griddle or heavy skillet over high heat. Add the pav slice into  middle and toast each side until golden brown, 2 to 3 minutes each.
  • Serve bhaji adding butter on top into plates, with the slice onion,and serve with the toasted pav and lime wedges on the side.
  •  Enjoy one of the yummy street food.

Masala Aloo Stuffed Idli


Ingredients :-

  • Idli batter - 400 gm
  • Boiled Potato - 4-5 nobs
  • Curry leaves - 2-3 strings
  • Chopped green chili - 2 nobs
  • Chopped onion - 1 large sized
  • Chopped coriander leaves - 2 tbsp
  • Ginger and garlic paste - 1 tbsp (optional)
  • Cooking oil - 3 tbsp
  • Turmeric Powder - 1/4tbsp
  • Salt as per taste
  • Tomato finely chopped  - 1 small sized(optional)

Instruction :-

For Stuffing :
  • Mash/ grate the boiled potatoes and keep it aside.
  • Heat oil into a pan,add curry leaves,chopped green chili,chopped onion and saute it for minutes with medium flame .
  • Then add the ginger-garlic paste,and saute it.now add the turmeric powder,chopped tomato,salt and saute it nicely until the tomatoes become soft.
  • Then add the Mashed potatoes into the masala and mix it nicely with low flame,then add the chopped coriander leaves and mix it,keep string for few minutes with low flame.
  • Now switch off the flame and remove the aloo masala into a plate.
  • Now take small portion of  aloo and roll it into your palm and give it to a tiki same and keep it aside.
Idli Process :
  • Boil a glass of water in idli pot,in the mean while grease the idli try into little oil.
  • Add salt into the Idli Batter and mix it nicely, add 1/2 serving spoon of batter in each mould of idli try.
  • Place one aloo tikki in each batter filled mould,then pour 1/2 serving spoon of batter filled on top of aloo tiki.(make sure the tikkis are covered with batter properly)
  • Repeat the same process for remaining batter,stuffed idlis are ready for steaming.
  • Place the idli try carefully inside the idli pot and cover the lid,and let it cook with medium flame for 12-15 minutes .
  • After 15 minutes switch off the flame and make it cool down.
  • Then gently take out the idli from try using a spoon.
  • Now your stuffed Masala Idli is ready to eat,serve hot with any kind of chutney or Samber as per your choice and enjoy your break fast.

Crispy Fried Rice Ball

Ingredients :-

  • Leftover rice - 1cup
  • Rice flour - 2-3tbsp
  • Onion - 1/2cup chopped 
  • Green chilli - 2 no. chopped 
  • Ginger - 1tbsp chopped 
  • Coriander leaves - 2tbsp chopped 
  • Chat masala - 1tbsp
  • Dry mango powder - 1tbsp
  • Chilli powder - 1/2tbsp (you can increase as per your requirement)
  • Salt as per taste 
  • Black pepper powder - 1/2tbsp
  • Oil for deep fry 

Method :-

  • Take a big bowl Add rice and all the ingredients together except oil and mix it nicely.
  • Put little pressure and mix the rice mixture properly and keep it aside.
  • Then take small  small portions, give it like ball shape and keep it aside.
  • Heat oil into a pan for deep fry. When oil is hot add the rice balls slowly one by one.
  • Deep fry all the balls till it turns golden brown and crispy.
  • Then remove it from the oil in to the kitchen napkin and serve hot with tomato sauce and enjoy your snacks.

Potato Pakora (Aloo Bhaji)

This is one of the very famous Indian snacks with one cup of tea in evening time . Kids will be like this snacks also.it will b very easy and simple recipes to prepare so try it.


Ingredients : -

  • Potato big sized - 2 nobs 
  • Gram flour (Besan) - 1cup
  • Rice flour - 1/4th cup
  • Turmeric powder - 1tbsp
  • Chilli powder - 1tbsp
  • Salt as per requirement 
  • Baking soda - 1/2tbsp
  • Garam masala - 1/2tbsp
  • Oil for deep fry 
 

Method : -

  • First wash the potatoes properly and pat dry it. Then cut it into equal slices and keep it aside.
  • Then take a deep bowl and add the gram flour,rice powder,salt,chilli powder,turmeric powder, baking soda and water to make a thick paste and keep it aside.
  • Then add the potato slices into the mixture and mix it properly.
  • Take a pan and add oil for deep fry make it hot. 
  • Check the oil if it's hot then take the potato slices with mixture and it in the oil one by one with medium flame.
  • Then keep turning it and let it cook properly till golden brown from both sides.
  • Then take it out from oil in to the kitchen towel.
  • Know it's ready to eat. serve hot with tomato ketchup and sliced onions and enjoy your snacks.

Potato pancake

    Ingredients : -

  • Potato (washed & peeled) - 3large sized 
  • Green chili - 1tbsp (chopped)
  • Red chili powder - 1tbsp
  • Half crushed black pepper - 1tbsp
  • Mixed herbs - 1tbsp
  • Egg - 2nobs
  • All purpose flour - 2-3tbsp
  • Onion (chopped) - 1large size 
  • Garam masala (optional) - 1/2tbsp (optional)
  • Salt - as per your taste 
  • Cooking oil - 50gm

Method : -

  • Grease  all the potatoes and put it in a bowl and add some water for wash and leave it for 10 minutes with water.
  • Then drained up the potatoes and squeeze it properly and keep it aside.
  • Take another bowl and broke the eggs and add chopped green chili, black pepper powder, mixed herbs, red chili powder and all purpose flour and mixed it properly to make a smooth paste.
  • Know add the paste  with potatoes and add the chopped onion and salt to it and mixed it properly and keep it aside.
  • Take a frying pan and add oil to it and let it heat.
  • Then take the potato mixture with spoon and put it in pan and press it to make a like bada shape.
  • Leave it for 5mints with low flame then turn it to fry another side and let it fry till golden brown and crispy.
  • Then remove it from the pan and serve hot with green chutney or ketchup and enjoy your snacks.

French fries

Ingredients  : - 

  • Potatoes - 4 large peeled and cut into long strips.
  • Salt as per taste 
  • Chilli powder - 1tbsp (you can increase as per your taste)
  • Oil for deep frying 
Method : -
  • Heat water in a pan and add salt ,chilli powder to it and Bring it to boil.
  • Now add the potatoes  in to this and cook it for 3-4 minutes.
  • Drain it in to the clothe and pat it dry.
  • Take another pan and heat oil for deep frying over medium heat.
  • Then add the potatoes and fry it in few batches for 5 minutes. Now put the heat to high flame and fry these potatoes till they turn golden brown.
  • Now drain it into a paper and sprinkle with some salt and chilli powder.
  • Now it's ready to serve with tamato ketchup.
