Poha Cutlet

Poha Cutlet

Ingredients :-

• Thick Poha -1 cup
• Boiled Potato - 1 nob
• Carrot - 2 tbsp grated
• Onion - 1 nob Chopped
• Green chili -1nob Chopped
• Boil peas - 2 to 3 tbsp
• Garam masala powder - 1/2 tbsp
• Turmeric Powder - 1/2 tbsp
• Chili powder - 1 tbsp
• Dry Mango powder/ lemon Juice - 1 tbsp
• Salt as per taste
• Ginger and garlic paste - 1/2 tbsp
• Coriander leaves chopped - 1 tbsp
• Oil - 1 cup

Method :-

• Take 1 cup thick poha into a bowl and rinse it once or twice. Then soak the poha in water just     about covering them for 3 to 4 minutes.
• Then using a strainer, drain all the water from the Poha. The poha should get softened well but there should be no water in them. So use a strainer to drain all the water.
• Take the boiled potato and Mash very well with a fork or with your hands.
• Add finely grated carrots, boiled green peas, finely chopped onions, 1 tablespoon chopped coriander leaves, ½ teaspoon of finely chopped ginger and garlic.
• Now add turmeric powder, red chili powder, garam masala powder, dry mango powder, a pinch of sugar (optional) and salt as per taste. Instead of dry mango powder, you can add ½ teaspoon lemon juice.
• Mix everything very well. Check the taste and add more salt or spices if required.
• Shape into small cutlets or tikki.
• Heat a tawa or a Pan, Add 3 -4 tablespoons oil and let the oil become hot. Place the poha cutlet on the tawa.
• When one side is lightly golden and crisp, turn them over.
• Turn them again when the second side is lightly golden and crisp.
• Flip them a couple of times more and pan fry till the tops have become golden. The onions will also brown and that’s the indication that the poha cutlet has cooked. Do fry them on a low to medium flame.
• Place the pan fried poha cutlet on kitchen paper towels to remove excess oil.
• Serve Poha Cutlet hot with  mint chutney or tomato ketchup.

Egg Pakora


Ingredients :-

  • Boiled Egg - 4-5 nobs
  • Gram Flour(Besan) -1 cup
  • Green Chili Finely Chopped - 2 nobs
  • Chopped Onion - 1 small sized
  • Red chili Powder - 1/2tbsp
  • Black pepper powder - 1/4 tbsp
  • Baking Soda -1/2 tbsp
  • Finely Chopped Coriander leaves - 1 tbsp
  • Salt to Taste
  • Oil for frying

Method :-

  • Remove the skin of boiled eggs and cut each boiled egg into two halves/4 pieces, Sprinkle little salt and pepper on all the pieces of boiled eggs.
  • Mix the gram flour,salt,chili Powder,Baking Soda,Chopped green chili,chopped onion into a bowl.
  • Then gradually add water into it and make a average consistency.
  • Now heat Oil into a pan for deep frying , once oil is hot then carefully dip each egg piece in to the prepared batter and put it into oil.
  • Then deep fry all the egg pieces with same process,fry it till it became golden brown from both sides.
  • Then remove it from oil and keep it with tissue paper.your egg pakora is ready to eat.
  • Serve hot with Green chutney or Tomato sauce and enjoy your snacks.

Chow Mein


Ingredients :-

  • Chow Mein - 1 pkt
  • Oil - 2-3 tbsp
  •  Cabbage (shredded) - 1/2 cup
  • Carrot (finely thinly shredded) - 1/2 cup
  • Capsicum(finely sliced) - 1/2 cup
  • Onion(finely sliced) - 1 cup
  • Ginger finely chopped - 1 tbsp
  • Garlic finely chopped - 2 tbsp
  • Green chili finely chopped - 1 tbsp
  • Soy Sauce - 1 tbsp
  • Tomato sauce - 2tbsp
  • Chili Sauce - 1 tbsp
  • Vinegar - 1 tbsp
  • Salt as per taste
  • Black pepper Powder - 1 tbsp
  • Chow Mein Masala - 2 tbsp

Method :-

  • Take a big bowl add water for boiling,once it start boiling add a big pinch of salt and 1/2 tbsp of oil and let it boil.
  • Then add the Chow Mein into the boiling water,and boil for 4-5 minutes.Chow Mein should be soft but not Mushy.
  • Then drain the water,run under running cold water to stop the cooking process.
  • Then add little oil and toss the noodles,so they do not stick to each other and keep it aside.
  • Now heat oil into a pan  with medium heat.
  • Once oil is hot then add the chopped ginger and garlic,then saute it for a minutes.don't burn it.
  • Now add the sliced onion and chopped chillis then saute it till it became soft and translucent.
  • Then add all the chopped vegetables(Carrot,capsicum,cabbage) with little salt.mix well and cook for 4-5 minutes only. vegetables are just soft,do not overcook it.
  • Now add soy sauce,tomato sauce,chili sauce,vinegar and mix it well and let the sauce get heated through medium flame.
  • Then add the Black pepper powder,little salt as per taste and Chow mein Masala then mix it nicely.
  • Now add the boiled Chow Mein into the vegitable mixture.Then mix it nicely and toss everything together till Chow Mein is coated with sauce mixture well.
  • Once Chow Mein is get heated through and mix nicely with masala then turn off the flame 
  • Your yummy Chow Mein is ready to eat, serve hot with Tomato/Soy sauce and enjoy.
(If  you want you can add some scrambled egg on top and serve.make it into a different tawal and when you serve just add on top and serve)

Chana Dal Vada/Masala Vada


Ingredients :-

  • Chana Dal (Bengal Gram) - 1 cup
  • Onion - 1 big sized(finely chopped)
  • Garlic - 3-4 cloves (Chopped)
  • Green chili - 1 piece (chopped)
  • Curry leaves - 1 string
  • Coriander leaves - 1 tbsp (chopped)
  • Salt as per taste
  • Oil for deep fry

Method :- 

  • Soak the Chana Dal ( Bengal gram) in water for about 2-3  hours.
  • Then Chopped the Onion,garlic,green chili,coriander leave,curry leave and keep it aside.
  • Now to prepare dal vada mixture for that take a mixture jar and add soaked chana dal and ground the dal and keep it aside.
  • Remove the chana dal to a bowl then add chopped onion,Chopped coriander leave,chopped green chili,chopped garlic,curry leave,salt and mix well all the ingredients and keep it aside.
  • Then heat hot in a pan for deep fry the vada, Now take a portion of vada mixture in hand and shape it into like vada.
  • Once oil is hot then add vadas one by one slowly into the oil and fry it from both the side with medium flame till the dal vada becomes golden brown in color.
  • Then Remove the vadas into the absorbent paper to get soaked the excess oil.
  • Now your Dal Vada/Masala vada is ready to eat. Serve hot with any chutney or Tomato ketchup and enjoy your evening Snacks.

Urad Dal Vada/Medu vada


Ingredients:-

  • Urad Dal - 2cup
  • Semolina/rawa/Sujii - 1/2cup
  • Baking powder - a pinch
  • Onion - 2nobs chopped finely 
  • Curry leaves - 2string chopped 
  • Green chilli - 2-3chopped
  • Ginger - 1tbsp finely chopped (optional)
  • Oil for deep fry 
  • Salt as per taste 

Method :-

  • Wash the urad Dal properly and soak it for overnight or 5-6hour.
  • Then grind the soaked Dal to make a thick batter with very little water if required.
  • Then remove it to a big bowl and add semolina,baking powder,salt and mix it nicely. After that add the chopped onions,ginger,green chilli,curry leaves and again give it a good mix and rest it for few minutes (10-12mints).
  • Then heat oil into a pan and check it once the oil is hot then take small portions into your hand and give it to vada shape and very slowly put it into the oil.( At a time you can prepare 4-5 vada.)
  • Let it cook with medium flame and in between turn it and let it cook from inside . Cook it until it became light brown and crispy.
  • Then remove it into the kitchen napkin to remove excess oil.
  • In the same process you use and prepare your all vada.know vada is ready to eat.
  • Serve hot with any chutney/sauce/samber and enjoy your snacks /Breakfast.
